1. Better Selection of Mature Paprika
Paprika pods on the same plant do not always mature at exactly the same time.
With hand picking, workers can visually select the pods that have reached the appropriate maturity and red color.
This helps reduce the proportion of:
Immature pods
Green or partially colored peppers
Damaged raw materials
Overripe or deteriorated pods
For paprika products where color value is important, starting with properly matured raw material is especially important.
2. Less Mechanical Damage
Machine harvesting is efficient, but it can create more physical impact during collection.
Paprika pods may be squeezed, cracked or damaged during mechanical harvesting and transportation.
Hand picking allows the peppers to be removed and collected more carefully, helping preserve the integrity of the pods before drying.
